I believe that cooking is a form of entertainment. In the midst of our busy ​daily routines, many perceive cooking as a task that has become a routine ​obligation for the sake of family. It's common for people to feel rushed for ​time, and cooking may have lost its sense of joy and connection due to the ​convenience of the modern world.

Food is the source of our bodies, and our well-being is significantly ​influenced by the meals we consume. Whether we are growing ingredients ​ourselves or easily obtaining seasonings, it is the result of the collaboration ​of many individuals. In today's highly convenient world, the process from ​one person to another has become less visible, causing people to forget the ​gratitude they should feel towards food.

I believe that we are not living solely through our own efforts but are being ​sustained by the support of many others. It's essential to realize this and, ​even in our busy lives, find joy, gratitude, and deliciousness in cooking by ​joining hands with many people. ABOUT TOMO

Hello everyone!


I'm Tomo Akutsu, residing on the Sunshine Coast in Australia.


I am known as an "Entertaining Japanese Cooking Instructor" and an "Orthomolecular ​Nutrition Advisor."


Since my early years, I've been assisting my mother in the kitchen and sharing my love for ​cooking with friends and family. Going to the fish market with my father ignited my ​inspiration for preparing delicious dishes. While I initially pursued an IT-related career in ​Japan, my passion for cooking remained strong. I learned the art of seafood cuisine from ​clients at the world-renowned Tsukiji Market. Throughout the years, I've cherished the ​value of cooking alongside others from small groups to large groups and for a wide range of ​special occasions.


I've practiced Aikido since childhood, and through international Aikido gatherings, I've ​made many Australian friends. With a desire to learn English and experience Western ​culture, I made the big move to Australia in 2009. Also, I am teaching Aikido in Queensland.


In 2014, I established my Japanese cooking classes, embarking on a culinary adventure that ​merges locally sourced, seasonal ingredients with healthy Japanese cuisine. I continue to ​teach cooking in various settings across Southeast Queensland, including homes, ​businesses, schools, and community halls amongst many others.


I am overjoyed by how much people love Japanese cuisine and culture and I am truly ​excited about the future, taking customers on even more delightful adventures by joining ​me and each other in my Japanese cooking classes.

Starting from my childhood practice of Aikido, I had numerous interactions with people from overseas, particularly from Australia.

From these experiences, I developed a desire to learn English and immerse myself in Western culture. In 2009, I arrived in Australia and embarked on a journey to incorporate healthy Japanese cuisine using locally sourced seasonal ingredients. This led me to continue with my cooking adventures.

I worked at a company that manufactured fishing kayaks, and the customers caught large tuna and mackerel which many of them cooked on their barbecues.


When I started teaching them about Japanese fish cuisine, they were amazed by the flavors and gradually it became increasingly popular."


I noticed that Australians are generally very cheerful and skilled at expressing joy through their actions, words and smiles.


Influenced by this, I realized that my cooking classes were gradually being surrounded by an increasingly enjoyable vibe. I discovered that a part of me was becoming immersed in the contagious spirit of fun."

The Japanese cooking classes I have initiated as a business have been introduced to numerous households, businesses, and schools across the state of Queensland.

I have been teaching a diverse range of children and adults spanning wide and various age groups.

"Steamed or pan-fried? Soy sauce or teriyaki? How many gyoza can you eat ​before you are considered a local? These and many more questions were ​pondered during our Year 9 and 10 Japanese cooking incursion on Monday, 14 ​September much like the following which we learnt about as well…

Ever wondered about that illusive taste you just cannot describe? It’s not sweet, ​sour, salty or bitter… We now know thanks to visiting Japanese chef, Tomo ​Akutsu (Japanese Cuisine Classes), it’s called ‘umami’ and can be found in things ​like meat, fish, tomatoes, cheese, and dried shitake mushrooms. Umami ​describes the unique and primary taste that cannot be created by mixing other ​tastes. In our maxed out gyoza and okonomyaki-making day in the kitchen, Year 9 ​and 10 Japanese students discovered the wonders of katsuoboshi/bonito flakes ​and dashi and how to wrap the perfectly pleated gyoza.

Students took turns flipping professional-looking okonomiyaki before dousing it ​with kewpie mayo and okonomiyaki sauce and watching the bonito flakes unfurl ​like wispy pencil shavings in the steam of freshly cooked Japanese pancake ​before breaking apart their ‘waribashi’ and diving in to taste their creations. ​Second rounds were a little circumspect with designs of ‘Sailor Moon and ​Hamtaro intricately drawn in mayo and sauce before calling ‘itadakimasu’.

Genuine thanks go to Tomo for the authentic cultural capital he shared with the ​students and for the cooking demonstrations, hands on skills and the ‘oishii’ food ​we shared together.
