ABOUT TOMO
Hello everyone!
I'm Tomo Akutsu, residing on the Sunshine Coast in Australia.
I am known as an "Entertaining Japanese Cooking Instructor" and an "Orthomolecular Nutrition Advisor."
Since my early years, I've been assisting my mother in the kitchen and sharing my love for cooking with friends and family. Going to the fish market with my father ignited my inspiration for preparing delicious dishes. While I initially pursued an IT-related career in Japan, my passion for cooking remained strong. I learned the art of seafood cuisine from clients at the world-renowned Tsukiji Market. Throughout the years, I've cherished the value of cooking alongside others from small groups to large groups and for a wide range of special occasions.
I've practiced Aikido since childhood, and through international Aikido gatherings, I've made many Australian friends. With a desire to learn English and experience Western culture, I made the big move to Australia in 2009. Also, I am teaching Aikido in Queensland.
In 2014, I established my Japanese cooking classes, embarking on a culinary adventure that merges locally sourced, seasonal ingredients with healthy Japanese cuisine. I continue to teach cooking in various settings across Southeast Queensland, including homes, businesses, schools, and community halls amongst many others.
I am overjoyed by how much people love Japanese cuisine and culture and I am truly excited about the future, taking customers on even more delightful adventures by joining me and each other in my Japanese cooking classes.
Warm regards,
Tomo Akutsu
"Japanese Cuisine Highly
Appreciated in Australia"
Starting from my childhood practice of Aikido, I had numerous interactions with people from overseas, particularly from Australia.
From these experiences, I developed a desire to learn English and immerse myself in Western culture. In 2009, I arrived in Australia and embarked on a journey to incorporate healthy Japanese cuisine using locally sourced seasonal ingredients. This led me to continue with my cooking adventures.
I worked at a company that manufactured fishing kayaks, and the customers caught large tuna and mackerel which many of them cooked on their barbecues.
When I started teaching them about Japanese fish cuisine, they were amazed by the flavors and gradually it became increasingly popular."
I noticed that Australians are generally very cheerful and skilled at expressing joy through their actions, words and smiles.
Influenced by this, I realized that my cooking classes were gradually being surrounded by an increasingly enjoyable vibe. I discovered that a part of me was becoming immersed in the contagious spirit of fun."
Developing a Fully-fledged Cooking Class
"I absolutely love sharing Japanese culture with everyone through the joy of cooking.
Cuisine is more than just about eating; it involves the delightful process of collaboration with friends and family in the kitchen and dining area. This becomes a highlight, and for those who join my classes, it's an essential form of communication that fosters connections."
My goal is for all my students to enjoy today's cooking class, cooking together, and fostering communication with each other. I aim to provide them with a lasting memorable experience.
Above all, I hope that in the future, my customers will create this cuisine for their own families and friends, enjoying truly happy times.
My recipes are streamlined, making it incredibly easy to prepare. Anyone can learn to cook and excel at it."
From your kitchen, let's embark on an adventurous journey into Japanese culture!

Testimonials
"Culinary Journey with Tomo: Uniting School Culinary Instructors"
"I had the privilege of joining Tomo's Japanese cooking class with fellow culinary instructors from our school. Tomo, our culinary guide, immersed us in the art of crafting gyoza and okonomiyaki, introducing the rich flavors of Japan.
A notable aspect was the insightful suggestion from our school coordinator, who booked the class, to create gyoza as a comforting remedy for homesickness, particularly for our Japanese exchange students. This highlighted not only Tomo's culinary skills but also a deep understanding of the emotional impact of food.
Additionally, Tomo organized a team-building session where my colleagues and I collaborated on preparing gyoza and okonomiyaki. This unique experience deepened our understanding of Japanese cuisine while fostering teamwork. Tomo's engaging teaching style and lively atmosphere made the class an enjoyable and enriching experience.
Looking forward to welcoming exchange students, the anticipation of sharing the joy of cooking gyoza is high. This class, booked through our school coordinator's thoughtful suggestion, not only imparted culinary skills but also instilled a sense of community, making our workplace a more vibrant environment for culinary education.".
"Culinary Exploration with Chef Tomo: A Japanese Cooking Incursion at my school".
"Steamed or pan-fried? Soy sauce or teriyaki? How many gyoza can you eat before you are considered a local? These and many more questions were pondered during our Year 9 and 10 Japanese cooking incursion on Monday, 14 September much like the following which we learnt about as well…
Ever wondered about that illusive taste you just cannot describe? It’s not sweet, sour, salty or bitter… We now know thanks to visiting Japanese chef, Tomo Akutsu (Japanese Cuisine Classes), it’s called ‘umami’ and can be found in things like meat, fish, tomatoes, cheese, and dried shitake mushrooms. Umami describes the unique and primary taste that cannot be created by mixing other tastes. In our maxed out gyoza and okonomyaki-making day in the kitchen, Year 9 and 10 Japanese students discovered the wonders of katsuoboshi/bonito flakes and dashi and how to wrap the perfectly pleated gyoza.
Students took turns flipping professional-looking okonomiyaki before dousing it with kewpie mayo and okonomiyaki sauce and watching the bonito flakes unfurl like wispy pencil shavings in the steam of freshly cooked Japanese pancake before breaking apart their ‘waribashi’ and diving in to taste their creations. Second rounds were a little circumspect with designs of ‘Sailor Moon and Hamtaro intricately drawn in mayo and sauce before calling ‘itadakimasu’.
Genuine thanks go to Tomo for the authentic cultural capital he shared with the students and for the cooking demonstrations, hands on skills and the ‘oishii’ food we shared together.
"Okonomiyaki Japanese Savoury Pancake class at our school "
Your simple yet incredibly delicious Okonomiyaki recipe, paired with a clear explanation of essential dashi in Japanese cuisine, elevated our cooking experience. Under your guidance, everyone successfully crafted mouthwatering Okonomiyaki, and we sincerely appreciate your expertise. The straightforward explanation of dashi added a depth of flavor we hadn't encountered before, making the cooking process enjoyable for all.
Your generosity in sharing knowledge during the pre-presentation was invaluable. The comprehensive explanation of Japanese cuisine's essence, from dashi intricacies to various seasonings, enriched our understanding effortlessly. Your engaging style made learning a delight for the students.
The lively atmosphere and humorous communication during the cooking class turned it into an entertaining experience. Your unique blend of knowledge, humor, and hands-on experience created a memorable and enriching culinary session.
In closing,
"I would like to share why I am so passionate about sharing Japanese cuisine in Australia"
"I am passionate about sharing Japanese cuisine in Australia to introduce the deliciousness and health benefits of Japanese food to everyone. My goal is to showcase that Japanese cuisine can be easily prepared at home, not just limited to restaurants.
Considering the popularity of Japanese cuisine in Australia, it's evident that Japanese culture has been well-received.
I aim to integrate Japanese cuisine into Australia's culinary landscape, fostering a deeper connection between Japan and Australia through food.
I offer an interactive entertainment-driven mobile cooking class. This program blends group cooking experiences with entertainment, providing participants with the opportunity to cook together in a fun and engaging environment while learning about Japanese cuisine.
Importantly, the program includes elements that allow participants to immerse themselves in Japanese culture.
Participants can learn basic cooking techniques and ingredients of Japanese cuisine as they cook together.
By using cooking as a means of engagement, participants interact with each other, fostering teamwork and enhancing communication skills.
My goal is to provide participants with an opportunity to immerse themselves in Japanese culture and culinary traditions, allowing them to develop a deeper understanding and appreciation for both.
