Hello everyone!


I'm Tomo Akutsu, residing on the Sunshine Coast in Australia.


I am known as an "Entertaining Japanese Cooking Instructor" and an "Orthomolecular Nutrition Advisor."


Since my early years, I've been assisting my mother in the kitchen and sharing my love for cooking with friends and family. Going to the fish market with my father ignited my inspiration for preparing delicious dishes. While I initially pursued an IT-related career in Japan, my passion for cooking remained strong. I learned the art of seafood cuisine from clients at the world-renowned Tsukiji Market. Throughout the years, I've cherished the value of cooking alongside others from small groups to large croups and for a wide range of special occasions.


I've practiced Aikido since childhood, and through international Aikido gatherings, I've made many Australian friends. With a desire to learn English and experience Western culture, I made the big move to Australia in 2009.


In 2014, I established my Japanese cooking classes, embarking on a culinary adventure that merges locally sourced, seasonal ingredients with healthy Japanese cuisine. I continue to teach cooking in various settings across Southeast Queensland, including homes, businesses, schools, and community halls amongst many others.


I am overjoyed by how much people love Japanese cuisine and culture and I am truly excited about the future, taking customers on even more delightful adventures by joining me and each other in my Japanese cooking classes.

As a child, I eagerly looked forward to accompanying my father to the fish market,

and it brought me excitement every day.

Under his guidance, I joyfully learned to prepare sashimi and sushi.


Seeing myself improve and receiving compliments from my family about the delicious dishes I made filled me with immense joy and satisfaction.


Furthermore, I was fortunate that my mother was exceptionally skilled in cooking.


I always looked forward to dinner, and without fail, I would be home by 5 o'clock.

Takoyaki

From a major cooking mishap during my childhood, I learned and grew to love cooking even more.


When I was in sixth grade, I decided to host a takoyaki (octopus ball) party at my house, despite having never made them before. I invited my friends over, and even my skilled mother didn't know the proper technique.


I ended up making takoyaki with an excessive amount of flour, resulting in them tasting heavy and bland. It was a complete disaster, and a pivotal moment for me.

I attempted to redo it a few times, but unfortunately, I couldn't create something delicious, and I ended up feeling embarrassed in front of my friends.


After that experience, I started researching the proper way to make takoyaki. I learned the importance of using the right amount of water and broth, and how it significantly affects the cooking process and the outcome.

When I invited my friends over again and served them the takoyaki, they exclaimed, "Delicious!" with excitement.


Even now, I still carry the joy from that heartwarming moment.


The transition from failure to success brought me a profound sense of achievement and happiness.

Even though working a different profession, my passion for cooking never wavered. I would frequently invite friends over and create cooking opportunities almost every week.


Given that my clients from my working profession were connected to Tsukiji Market, I was eager to learn about seafood ingredients and cooking techniques. At times, I found myself more captivated by this than my actual job.


I delighted in brainstorming various cooking ideas and turning them into reality; it became a source of personal enjoyment for me.

This photo was taken during a cherry blossom viewing event while I was working in Tokyo. I took an early morning off, headed to Tsukiji Market at 4 AM, and procured fresh seafood.


Then, I prepared three-tiered bento boxes and invited everyone to a cherry blossom lunch at a park near the office. It was a delightful experience to combine the freshest ingredients with the beauty of cherry blossoms for a memorable meal.

Starting from my childhood practice of Aikido, I had numerous interactions with people from overseas, particularly from Australia.

From these experiences, I developed a desire to learn English and immerse myself in Western culture. In 2009, I arrived in Australia and embarked on a journey to incorporate healthy Japanese cuisine using locally sourced seasonal ingredients. This led me to continue with my cooking adventures.

I worked at a company that manufactured fishing kayaks, and the customers caught large tuna and mackerel which many of them cooked on their barbecues.


When I started teaching them about Japanese fish cuisine, they were amazed by the flavors and gradually it became increasingly popular."


I noticed that Australians are generally very cheerful and skilled at expressing joy through their actions, words and smiles.


Influenced by this, I realized that my cooking classes were gradually being surrounded by an increasingly enjoyable vibe. I discovered that a part of me was becoming immersed in the contagious spirit of fun."

The Japanese cooking classes I have initiated as a business have been introduced to numerous households, businesses, and schools across the state of Queensland.

I have been teaching a diverse range of children and adults spanning wide and various age groups.

A: Most of the cooking utensils and tableware I use are imported from Japan. Including knives, many items are directly sourced from Japan, and are also offered for sale. If you find something you liked and used during the cooking class, you can certainly purchase it anytime.

Q.Will the recipes be limited to Japanese cuisine only?

A:I have been conducting cooking classes since 2014, and especially in Australia, we have a diverse community with people of various ethnicities and cultures from different countries. From then until now, based on customer feedback, I have been primarily focusing on Japanese cuisine with ingredients available in Australia. The recipes have been continually improved based on the feedback from many customers, resulting in flexible and simplified recipes tailored to customers' preferences.

Q: Can the cooking class timings be arranged?

A: In general, for lunch sessions, I start around 10 AM, and for dinner sessions, I start around 4 PM. These times are chosen to accommodate the actual mealtime. If you have specific circumstances and would like to request a different timing, please feel free to discuss it with me in advance.

Q: What is the ideal number of participants?

A: The ideal number of participants is around 5 to 10 people. However, this can vary depending on the size and facilities of the cooking class venue. I can accommodate groups of up to 25 people, but to ensure the best experience tailored to your group, please feel free to inquire in advance.

Q: Is there anything we need to prepare before the class?

A: Generally, I will bring most of the cooking utensils. I provide chopsticks, but for those who find them difficult to use, having cutlery like forks and knives and larger plates for each person would be great. I'll bring other tableware with me.

Q: Can you accommodate for my child's food allergies?

A: I can make adjustments to accommodate for conditions like gluten-free, dairy-free, vegan, and vegetarian diets to a certain extent. Depending on the menu, I can suggest recommended dishes and recipes while also addressing your concerns. As we go through the cooking process, I can also thoroughly confirm and address any dietary needs.

Q: Can you provide more details about the separate travel fee?

Within 30km: $10

Within 60km: $25

Within 100km: $50

Within 150km: $70

A: The cost per person varies depending on the chosen recipes.

For groups of 5 or more:

  • For 2 recipes, it's approximately $20 to $30 per person.
  • For 3 recipes, it's around $30 to $40 per person.

Please note that these amounts account for the larger quantity of ingredients needed for the cooking class compared to a regular meal. All the necessary seasonings are included, and you'll take the dishes home. Once the menu is finalized, we'll calculate the exact ingredient cost and provide you with the final amount.
